Rhubarb Cherry-Goo Bread

So today i was graced with rhubarb in my organic delivery and my original plan was to make strawberry rhubarb pie BUT i had no strawberries in the house so i went in a completely different direction and made bread. Mind you i have never baked with rhubarb but i have enjoyed it in a pie or two.

  • 1 cup non-fat milk
  • 1 tablespoon lemon juice (i just juiced one lemon)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups brown sugar
  • 2/3 cup apple sauce
  • 1 egg
  • 1/2 teaspoon ground cinnamon
  • 2 1/2 cups whole wheat flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups chopped rhubarb
  • 1/2-1 cup cherry pie filling (i used chukar cherries & eyeballed it)
  • 1/2 cup slivered almonds (optional)
Preheat your oven to 325, grease & flour 2 loaf pans or do what i did and make 1 loaf and a dozen muffins. Mix together the milk, lemon juice & vanilla, set aside.

In a big bowl mix together the brown sugar, apple sauce, egg & cinnamon.

Once that's done add the flour, salt, & baking soda to the mix along with half the milk mixture(i always just dump it all in one instead of combining the dry then adding to the wet), stir a bit, then add the rest of the milk mixture. Do this til just combined then add the rhubarb & cherry goo & nuts if you are using them.


Pour into loaf pans or muffin tins or what have you and bake!
I would say 25 mins for the muffins and 40-50 mins for loaves or until you toothpick comes out clean.

According to comments on the original recipe this bread freezes well so if you have a plethora of rhubarb might as well double the recipe (:



So as i was typing this the oven beeped & i couldn't wait till they were cool to try, these are yum! i think i would add more cherry next time & maybe more cinnamon but these are delicious as is.
